Lasagnas on Monday

Yesterday was a lasagna day. Every 6 or so months I make a mess of the kitchen and make a bunch of lasagnas. I make them from semi-scratch (I make my own sauce from canned tomatoes and I use store bought noodles), but I like homemade lasagna and find the mess is worth it if I make more than one.
Here’s my mess:



I made veggie lasagna with spinach, squash and tofu. We didn’t eat any for dinner last night but will be enjoying it for lunch or dinner today!

    your kitchen is beautiful. i love making freezer meals too.
